~Cantonese Beef Steaks~

1 lb fillet or London Broil
2 scallions, chopped
1 tsp minced ginger
3 cloves garlic, minced
1/3 cup frying oil
and, if you like vegetables, this dish is great with:
Snow pea pods
Broccoli
Canned chinese straw mushrooms

Seasoning A: {mix together as a meat marinade}
1/2 tsp salt
1/4 tsp baking soda
1/2 tsp sugar
1 tsp dark soy sauce(aka thick or black soy sauce)
2 tsp cooking sherry
1 Tbsp cold water
2 tsp cornstarch

Seasoning B: {mix together and set aside}
1/3 cup chicken stock
2 tsp dark soy sauce
2 tsp light soy sauce
2 tsp Worcestershire sauce
1 Tbsp BBQ sauce or soy bean paste
1 Tbsp ketchup
2 tsp cooking sherry
2 tsp sugar
1 tsp cornstarch
1/4 tsp salt
1/4 tsp white pepper

Chill the meat and cut across the grain into slices about one inch by 2 inches.  Marinade in seasoning A for about 20 minutes.

Heat the oil in a wok (or nonstick frying pan) and saute the scallions, ginger, garlic and any vegetables for about 2 minutes on Medium-high heat.  Push aside or remove from pan. 

Put meat in pan and stir fry on high heat - allow the meat to turn color and try to turn only once or twice, don't overcook. 

Mix meat in with vegetables and seasonings again, then add seasoning B.  Stir and simmer until sauce is a rich gravy, about 3-5 minutes. 

Serve with white rice.

Fresh pineapple is a great compliment as a side dish too!
